Renowned Chef Nischan to keynote UW-Green Bay Food Day Celebration

UW-Green Bay will welcome nationally renowned Chef Michel Nischan as the keynote speaker for its Food Day Celebration Monday, Oct. 20 in the Phoenix Room of the University Union on campus, 2420 Nicolet Drive.

Nischan, a two-time James Beard Award-winning chef, will deliver his keynote on the state of the food system from 6-7 p.m. to conclude the day’s events. The son of farmers who lost their land with the onset of large-scale agricultural practices, Nischan grew up with a deep appreciation for sustainable agriculture and those who work the land. As a professional chef and advocate for a more healthful, just and sustainable food future, he has built on those childhood values and become a catalyst for change through ground-breaking initiatives linking communities of urban and rural poverty with local agricultural producers. On his radio show, “It’s More than Food,” Nischan tackles some of the most pressing issues surrounding the way we produce our food and explores exciting new ways for individuals to become part of an improved food system. Nischan’s keynote address will be live-streamed through Google Hang Out on Air (at https://www.youtube.com/watch?v=arRRIptK37Q) for those who are unable to attend.

“Food Day is part of a nationwide movement to celebrate and advocate for sustainable, healthy, socially just and affordable food,” said student organizer Alex Stenner. “This year, at our campus, Food Day is about connecting people with the reality of what it takes economically, environmentally and socially to get food from the fields and to the final dish. Michel Nischan will deliver a mover-and-shaker’s point of view on what impacts food systems have on so many different parts of society, thus giving us a sense of where we are and where we can take our food system initiatives.”

Nischan’s talk will conclude a full day of Food Day Activities at UW-Green Bay, all of which are free and open to the public. Other events include the following:

No Waste Breakfast, 7:30-10 a.m. (Please note that this event takes place in the Richard Mauthe Center): Attendees are invited to enjoy a “recycled” breakfast designed to draw attention to the fact that many restaurants throw away literally tons of edible food. Last year’s event redirected more than 300 pounds of delicious food to participants. Attendees will help reduce bakery waste through their participation in this free breakfast.

Inspiring Farm to Fork Characters and Stories, 2:30-4 p.m. Attendees can expect to learn directly from the sources, in 10-15 minute presentations, what it takes to get the locally sourced meal for the 2014 Food Day Celebration on participants’ plates. Hear from the farmers themselves, the event’s food distributor, Trust Local Foods, and Chef Chris Mangless from Green Bay restaurant Three Three Five.

A Panel of Food System Movers and Shakers, 4-4:45 p.m. Participants will connect directly with local individuals who are invested in creating a better food system in our community. Panelists will share their stories and answer questions.

Community Dinner, 5-6 p.m. Students, faculty, staff and community members are invited to enjoy a locally sourced menu that is curated by UW-Green Bay students. Dishes such as pulled pork, sweet potato chili, buckwheat noodles with miso-orange or peanut sauce will be featured.
