UW-Green Bay presents Dinner Lecture Series event featuring Andean cuisine

The University of Wisconsin-Green Bay will continue its recently revived Dinner Lecture Series with a Thursday, Oct. 11 event featuring the Andean region of South America.

UW-Green Bay Assistant Prof. Gabriel Saxton-Ruiz and visiting Scholar in Residence Alex Godoy-Faúndez will introduce campus and community attendees to this vibrant region through a dinner presentation focusing on the culinary customs and style of the Andean region. Visiting scholar Godoy-Faúndez is an assistant professor and research fellow in the Research Center for Sustainability, Faculty of Ecology and Natural Resources at Universidad Andres Bello in Santiago, Chile.

“In truly interdisciplinary fashion, Dr. Godoy-Faúndez and I will discuss the gastronomy of the Andean region from two separate fields of study,” said Saxton-Ruiz, assistant professor of Humanistic Studies and Spanish. “I plan on describing the region’s significant contributions to international cuisine through its autochthonous ingredients such as potato and quinoa. My Chilean colleague has prepared a presentation regarding how his country’s food industry has made strides in recent decades to become more sustainable and eco-friendly.”

The Dinner Lecture Series meal will feature authentic Andean cuisine including Grilled Beef Antichuchos Skewers (Peruvian Beef Kebabs); Corvina a La Chorillana (Peruvian Fish in Spicy Tomato Sauce); Papa a la Huancaina (Peruvian Potatoes); Peruvian Corn Cobs; Dessert Alfajores (Caramel Cookies); and beverages.

This is the second year of the recently revived UW-Green Bay Dinner Lecture series, which was for decades a popular campus and community fixture. In 2011 the UW-Green Bay Division of Outreach and Adult Access brought back the series, which offers an enjoyable, educational chance to broaden cultural horizons, said Mona Christensen, UW-Green Bay director of camps and conferences. Sessions during the 2011-12 academic year featured the cuisine of Israel and the Basque region of Spain, with related lectures and discussion featuring UW-Green Bay faculty members.

The Andean Experience dinner lecture event begins at 6 p.m. Thursday, Oct. 11 with a pre-dinner gathering in the Phoenix Room of the University Union on campus, 2420 Nicolet Drive. The dinner and presentation will follow, also in the Phoenix Room, from 6-7:30 p.m. Cost is $24. A cash bar will be available, featuring Peruvian wine.
